Hand-Trimming

Even an extra eighth-inch of fat on a cut of meat can make or break a dish. We’ll work with you to understand how precise your fat and portioning specs need to be and then our expert butchers will trim to exact specifications.

Flame and Oil Searing

We sear our meats before cooking them in a sous vide bath. Flame and oil searing brings extra flavor complexities to your proteins while also adding visual appeal.
