The Miniat Legacy

Now five generations strong, in each era, Miniat has continued to evolve the business to meet the demands of our customers and the changing marketplace.
1896 – 1949
Michael Miniat, our founder, started the company by selling meat to the people of Chicago from a  horse drawn carriage in 1896. By the 1940s, the business had expanded to using refrigerated trucks on multiple routes across the city.
1950 – 1979
The meat industry changed dramatically in the 1950s and 1960s as US regulatory and food safety protocols began taking shape. Miniat proudly evolved its processes to exceed those new standards.
1980 – 2010
In the 1980s, Miniat pioneered sous vide cooking technology in North America for use in large-scale meat manufacturing—a breakthrough that is still the foundation for our products’ consistency, quality, and culinary precision today.
Today
Miniat continues to develop and manufacture a wide variety of meat-based protein and animal fat solutions for our customers. We look to the horizon to prepare for what the future might bring to the industry and innovate alongside our partners.

Strategically Located Facilities

With facilities strategically located in the Midwest and Southeast, Miniat delivers trusted, high-quality product solutions across the country.

South Holland, IL

Our South Holland facility has evolved through four major expansions since opening in 1995. The 165,000-square-foot flagship location houses our Innovation Center, Culinary Center, R&D Lab, and Pilot Plant— making it the epicenter of our product development and culinary creativity.

Carrollton, GA

Originally built in 1993 and acquired in 2020, our 125,000-square-foot Carrollton facility maintains redundant capabilities with our South Holland site. It also offers steam, open smoking, and kettle cooking technologies and is poised for future growth and expansion.

By the Hand is a Chicago-based, after-school program that emphasizes academic excellence while nurturing the whole child -mind, body, and soul. By the Hand services Chicago’s most dangerous and under-resourced neighborhoods.

Big Shoulders Fund

Big Shoulders Fund provides support to inner-city schools that provide a quality, values-based education for Chicago’s children. One hundred percent of funds raised go toward programs that benefit Big Shoulders Fund schools and the students they serve.

Juvenile Diabetes Research Foundation

Juvenile Diabetes Research Foundation is leading the fight against type 1 diabetes by funding research, advocating for policies that accelerate access to new therapies, and providing a support network for millions of young people around the world.

Misericordia Heart of Mercy

Misericordia Heart of Mercy supports children and adults with intellectual and developmental disabilities. Misericordia currently serves more than 600 children and adults residentially, from diverse racial, religious and socio-economic backgrounds.
